Rawnola / by lee tilghman

This is a post on how to make rawnola. It is inspired by @Lonijane,  tweaked a little bit to make it my own.

Rawnola is a staple in my diet because of its healing qualities. It is simple, pure, super nutritious and SO easy to make.  It is extremely chewy and adds a very pleasant texture to my smoothies, oatmeals, and chia jars. I even eat it by itself at times.

It takes a little bit of extra planning to replace granola, but I promise you it's worth it.

What you will need:

•2 cups pitted dates (medjools if you can. They're pricier, but so much yummier)

•1 cup coconut shreds (unsweetened)

•a food processor

Place the pitted dates and coconut shreds in your food processor. Turn on for about 30 seconds, watching carefully to make sure it doesn't pulverize your dates. You want a clumpy, chewy texture.  When desired consistency is reached, store in a mason jar refrigerated. Good up for three weeks!

And that's it! You can make it your own by adding things like cinnamon, peanut butter, oats, almond butter, spirulina for you brave souls.
