This recipe is adapted from Chocolate Covered Katie! Her blog is amazing and I am so thankful she shared this recipe with the world.
Ok, we all now cookie dough is the best invention there ever was. Half the reason we actually make cookies is to eat the dough by itself. But long gone are the days of sugar comas and guilty feelings after indulging- with this recipe, you can actually make and enjoy your own healthy vegan cookie dough! Feel free to adjust the recipe to your own liking- I used maple syrup and only 1 tbsp of oats.
1 16 oz can of chickpeas drained and rinsed well
½ tsp salt
1/4 tsp baking soda
2 tsp vanilla extract
1/4 cup nut butter(I use peanut butter)
1/4 cup milk of choice (I use almond milk)
2 tbsp maple syrup
1/3 cup vegan semisweet chocolate chips
2 to 3 tbsp oats
Add all ingredients (except for chocolate chips) to a good food processor, and process until very smooth. Then mix in the chocolate chips.
Pour into a mixing bowl
Add chocolate chips and enjoy with graham crackers, apples, atop rice crackers and OBVIOUSLY by the spoonful.
