Make your own sushi!

Sushi can seem a little intimidating at first, but if you don’t try it once, you’ll never know! First, buy a sushi starter kit from your local grocery or Asian food store. This includes a bamboo rolling pad, and a rice paddle. Mine cost me about $16.00.

I’ve only made sushi a few times, but each time I get a little better and better. It’s a delicious and fun way to pack in your vegetables, and an excuse to eat hella wasabi. 

I usually mix-up the ingredients with whatever I have on hand. My favorite combo thus far is the one pictured above.  This is marinated tofu with avocado, carrot, spinach & cooked purple rice. The tofu is marinated for 12 hours in a homemade mixture consisting of oyster sauce, soy sauce, and sesame oil. I don’t use measurements for my marinade, I just eyeball it.  I then sear it on really high heat for 4 minutes on each side. Here is the recipe:

Homemade Vegan Sushi (makes two rolls)


-2 sheets of nori

-1 cup purple rice (cooked, then cooled)

-1 tsp rice wine vinegar

-1/2 block of firm tofu





-soy sauce


-oyster sauce

-sesame oil


First, combine sesame oil, oyster sauce, and soy sauce together in a shallow dish. Then cut the tofu into 1/2” bars, and let sit in the mixture in the fridge for 8-12 hours.

After your tofu is done marinating, you can cook it a greased pan on high heat for 4-5 minutes on either side. Let cool.

Toss the cooled rice in rice wine vinegar. Just a splash!

Place nori on top of bamboo pad, then purple rice 1/2 way down covering only 1/2 of your nori sheet. Then add spinach, carrots, avocado, and thin slices of the tofu on top of the rice. Be delicate, do not overstuff. Sushi needs a tender, loving, caring hand. 

Smudge the top of the nori with water or sticky rice.  

Fold the entire bamboo pad using your both hands onto itself. This part is a little tricky to explain. You must hold the sushi very tightly, not letting go. Keep rolling until the pad rolls onto itself. 


Cut into 6 pieces. Smother in wasabi & soy sauce and enjoy!
