Mermaid Butter

This is a recipe inspired by the lovely California ladies over at Wildfolk & Co. 

I love color. I love healthy food. Specifically, I love healthy food that contains color. And lucky for me, most healthy food is vibrant in both color & nutrients. 

Introducing something called mermaid butter. Basically, it is a raw, homemade almond butter with spirulina added to give it that deep, gorgeous, mermaid-scale green. Spirulina is a type of blue-green algae that is rich in protein, vitamins, minerals, and carotenoids. It is also heavy in antioxidants that help protect cells from damage. 

Mermaid butter caught my attention for a few reasons. First, it has a simple list of ingredients that I always have laying around.  Secondly, its taste. Spirulina at first can taste very strong, but this almond butter masks its taste well. Thirdly, this stuff is extremely versatile. I adjusted the recipe a bit to my liking.

  • 2 cups raw almonds

  • 6 tbsp maple syrup

  • 1 tbsp raw coconut oil (melted)

  • dash cinnamon *optional*

  • 1 tsp pink Himalayan sea salt

  • 3 tbsp Philosophie Green Dream Superfood powder

Pour all ingredients into a Vitamix. Blend for 40 seconds on low, churning with the Vitamix tamper. Push down ingredients until smooth and creamy. Store in mason jar in cupboard. Put in smoothies, on toast, in oatmeal. Smeared on a crisp sweet Jazz apple tasted extremely good.
