Blackberry Kiwi Chia Pudding Parfait

Summer is here and you know what that means. Lots and lots and lots of berries.

When I was growing up blueberries and blackberries were my two favorite fruits. I loved their color but I loved their sweetness and subtle texture more. Biting into a berry is one of summer's sweetest senses. My mom also used to call me blueberry eyes since my eyes were so bright and blue. Now they are green and yellow! Eyes are weird. 

Last week in Portland I went berry picking. We got 13 pounds of hood strawberries, blueberries, and raspberries. I was quite overwhelmed with the amount of berries but I managed to polish almost all of them off. I am so proud of myself!

Here, I create a delicious vegan parfait made with chia seeds, bananas, fresh cucumber, and baby spinach. The vibrant colors are both pleasing to the eyes and to the tastebuds. Nothing more fun than building parfaits with a friend for a Saturday morning brunch. Enjoy!

Serves 2

Ingredients

Green Layer:

2 frozen bananas

1 kiwi

handful baby spinach

1/2 cup coconut milk

4 1-inch slices of cucumber

Chia Layer:

1/4 cup chia seeds

1 1/2 cup coconut milk

Bottom Layer:

1/4 cup frozen blueberries

1/4 cup frozen blackberries

2-3 tbsp oats

1/2 cup coconut milk

2 frozen bananas


Instructions

  1. Make chia pudding by combining 1/4 cup chia seeds with 1 1/2 cup coconut milk. Stir vigorously. Let sit for 20 minutes in fridge or overnight, covered.

  2. Make green layer: add bananas, kiwi, cucumber, spinach and coconut milk to a blender and blend until smooth. Set aside in freezer.

  3. Next, make berry layer. At oats, blueberries, strawberries and banana to a blender and blend until smooth. Add to the bottom of a glass jar.

  4. Next add your chia pudding on top of the berry layer.

  5. Top your chia pudding with your green layer. Garnish with blackberries.  Enjoy immediately.
